It is designed to process very small quantities of product-up to 20 litres an hour - while replicating the full-scale process and providing information to enable accurate scale-up. It uses three heat exchanger barrels for respectively pre-heat, final heat and cooling, with various holding times available. The unit has a footprint of less than a square metre and is mounted on a stainless steel cabinet which contains all its services such as hot water circulators. It only needs to be connected to an electricity and water supply. A splash-proof membrane control console allows the operator to select all the major parameters such as product temperature (up to 150ºC) and mutator speed (up to 1,000rpm) product flow and output temperature. A real time data logger option makes collecting information on product performance very easy. Other configurations of the FT25 family include a margarine crystalliser and a continuous ice-cream freezer. |
